Pasta & Beans in Pesto





Pasta and Beans in Pesto

Ingredients


Half a can of mixed beans
Courgette, grated
Onion, chopped
Garlic clove, chopped
Thyme, sprig, chopped
Spinach, sliced
Linguini for 4
2oz Cheese, grated
3sp Pesto
1sp cooking oil

Method

Bring a large pan of water to the boil, add the linguini and cook for about 12 minutes.

Meanwhile, fry off the onion, thyme and garlic in a pan and add the grated courgette. Stir and then add the mixed beans. Cook for about eight minutes.

Stir in the spinach and cook for a further couple of minutes.
Drain the water off the cooked linguini, return the pasta to the pot and stir in the pesto.

Serve up the dish - you can either mix everything in together or serve the Pasta and Beans on a bed of the pesto linguini.

Sprinkle a small amount of cheese on top of the meal and enjoy.
