1.5 Friday – Meat and Vegetable Quiche

     Welcome to Day 5 of my campaign to cut the cost of your main daily family meal. By following my simple recipes, you will already have an extra £40 in your pocket. Today you can treat everyone to a giant slab of meat and vegetable quiche...  


Meat & Vegetable Quiche


Ingredients

7oz plain flour
3 1/2 oz of butter
1/2 dessert spoon cooking oil
Shredded cabbage
Slices of onion
2 eggs
Half pint of milk

Today we are going to make a quiche for dinner.

Firstly, make the pastry by rubbing together the flour and butter in a bowl until they look like fine breadcrumbs. Use a small amount of water (two dessert spoons) to help bind and knead it into a ball.



Put it in a bowl and place in the fridge for half an hour.

Take the pastry from the fridge, roll it out and remember to flour your surface and rolling pin. The pastry should be rolled out to slightly larger than the shape of the pie dish and to a thickness of 2-3mm.

Place the rolling pin on top of the pastry and lift the pastry over the rolling pin and use the pin to pick it all up so that you can line your pie dish with the pastry.

Prick the pastry with a fork and place in the oven on a moderate heat of about 170 (gas mark 3) for 15 minutes.

Take the turkey meat that you prepared on Wednesday out of the fridge and using the half a dessert spoon of cooking oil, brown off the meat. Slice the onion and shred the cabbage, then add to the meat and continue to cook.

While that is being done, mix the two eggs and half a pint of milk together.

Take the pie case out of the oven and spoon the meat and vegetable mix evenly into the pie dish. Pour over the milk and egg mixture and put it back in the oven for half an hour.

Prepare the peas a minute or two before serving the dish.
