5.1 Monday - Meat Loaf
Meat Loaf with relish
Ingredients
400g beef mince
1 onion, finely chopped (save a little for the relish)
garlic, chopped
thyme, chopped (save a little for the relish)
1 large carrot, grated
3 large Mushrooms, finely chopped
2 sp seasoning
Vegetables
3 large potatoes
2 sp sugar
4 tomatoes
Method
Place the chopped ingredients in a large bowl with the minced beef and mix together thoroughly.
Place the mixture into a loaf-shaped cooking tin or oven proof dish and pack down firmly. Place in a hot oven and cook for about 45 minutes.
Roughly chop the tomatoes and add the leftover chopped onion, thyme and the sugar in a pan. Place on a low heat and leave to gently cook down. This should make sufficient relish for quite a few servings – keep some for tomorrow’s recipe.
Bake the three potatoes in a microwave.
Take the meat loaf out of the oven and leave for a couple of minutes to cool a little, then turn out on to an oven proof plate and pop it under the grill for a while to crisp off the top.
Prepare the vegetables. Slice the potatoes into rounds and serve.
