6.3 Wednesday - Carbonarra



Lardons or chopped bacon

2 egg yolks
Cream, 100ml
Thyme, sprig
Spring greens, sliced


Put the pasta on to boil in a large pot.

Mix together the egg yolks, cream, and cheese, and set aside. 

In a frying pan, fry off the bacon until cooked, then add the spring beans and the chopped thyme and stir well.

Drain the pasta, but make sure you save some of the pasta water.

Add the pasta to the pan and stir it around. Add two ladles of the pasta water to the pan.

Turn off the heat before stirring in the creamy mixture. Then you can serve your dish.
