Pork stew
Ingredients
Pork belly
Onion – chopped
Garlic – crushed
Sprig of Thyme
3 spoons of seasoning
Potato – chopped
1 potato cut into bite size peices
8 Spoons of flour
Water
A pinch of salt
1 spoon of oil
Celeriac (from last week)
Spring greens
Method
Cut each pork belly into three or four pieces. Place in a large pot with the oil and seasoning.
Fry off the pork chunks until they are brown.
Add the chopped onions, garlic and thyme. Add the potato.
Put in some chopped celeriac. Put in 2 pints of water.
Stir and leave to cook for an hour. Check every 15 to 20 minutes and add more water if required.
Then mix together flour, salt and water to make a dough ball.
Pinch off a small amount and roll into individual dough balls.
Add to the soup, ten minutes before end.
Add potato and spring greens. Cook for a further ten minutes and serve.
