2.5 Friday - Chicken 'n' Chips with a twist

Chicken kebabs,
wedges and veg


Ingredients


1 Chicken breast
Onion
3 potatoes
Seasoning
Thyme
Garlic
Vegetables
Cooking oil

Method

 
Remove any bone from the chicken breast and cut the meat into cubes of similar size, about the size of an Oxo cube.


Season with chopped garlic, chopped thyme and one spoon of seasoning.

 

Use a skewer or cocktail sticks and slide on the meat with a piece of onion and another piece of meat to make either a couple of short kebabs or one long one each.



Place the kebabs in an oven proof dish and drizzle with half a spoon of cooking oil and place in the oven to cook at 180 deg.

Wash the potatoes – do not peel them – and make potatoes wedges by first slicing the potato in half and then slicing each half into three segments.


Rub with one spoon of cooking oil and arrange them to be skin down on a baking tray and place in the oven.


To cook, turn the oven up to 200 deg for about 40 minutes, during which time prepare and cook the vegetables and then serve.
