Beef curry
Ingredients
Beef
Onion – chopped
Garlic
1 potato – chopped/cubed
4 fresh tomatoes – chopped
cm of coconut cream
3 spoons of seasoning
1 cup of rice
Sprig of Thyme
Chopped Potato
Method
Slice the beef into cubes. Sprinkle with the seasoning and fry off in oil.
Stir in the onions and garlic and cook through. Add the chopped tomatoes and thyme.
Stir in pint of hot water. Add the coconut cream and potato and cook for 5 minutes until it is melted into the sauce.
Then pour everything into an ovenproof dish with a lid, and place in the oven and cook for an hour.
Place the rice in a pan. Wash it to get rid of the starch. Add 2 inches of water. Place on the hob and bring to the boil.
Turn the heat right down. Put on the lid and allow the rice to cook for approximately 15 minutes.
Prepare vegetables and serve.
