2.1 Monday - Mackerel Meal

Mackerel meal


Two smoked mackerel fillets (fresh)

Two unsmoked mackerel fillets (fresh)
Medium onion, chopped
One clove garlic
Sprig of thyme
4 potatoes
vegetables for 4


Peel and boil the potatoes, enough for four people. Check the fish for bones. Slice the fillets horizontally in half and dab them in a little flour on a plate.

Fry off the chopped onion, garlic, thyme and seasoning in a knob of butter until soft.

Add the fish skin side down and cook slowly so as not to burn.

After five or so minutes, turn the fish over and pour in a quarter of a pint of hot water. Cook for five minutes, add cornflour to thicken. Stir in well.

Prep the veg.

Place the smoked and unsmoked fish on each of the dinner plates and add the veg.
