Fish Chowder

Fish Chowder

Ingredients

Mackerel (save some for tomorrow's Spanish Omelette recipe)
Cod
Thyme, sprig

Garlic, clove, chopped
1sp seasoning
1 onion, sliced
2sp flour
Potatoes, sliced
Milk, half pint

2sp cooking oil
Vegetables

Method

Heat the oil in a large pan and gently cook the mackerel and cod pieces. Add the garlic, onion, potatoes and seasoning. Cover and heat gently for about 10-15 minutes. Stir occasionally.

Sprinkle the flour into the pan, stirring it into the cooked ingredients. Carefully add the milk and thyme and then cook for a further five minutes.

Prepare and cook the other vegetables and serve into four bowls - then enjoy.

  1. I thought this wouldnt be enough for an evening meal for 3 of us, but it turned out to be very filling and it would have done 4 people easily expecially with the nice crusty bread (not on the shopping list). I would be more careful about removing bones from the fish next time I make it and will also remember that I need to reserve some mackerel for the Omelette tomorrow!
