4.5 Friday - A cheese and bacon treat

Stuffed Baked Potatoes













Ingredients

4 small to medium potatoes
Half pack of bacon, chopped
¼ pint milk
2 sp Flour
Knob butter
Thyme, chopped
½ onion 
Cheese

Method

Wash the potatoes, prick them with a fork and place in a microwave oven to cook.

In a frying pan, cook the bacon and onion, then take out the cooked potatoes and slice each in half.

Put the flour, milk, thyme and butter together in a saucepan, heat up and whisk continually to make a nice thick sauce. Add some grated cheese.

Use a kitchen towel to protect your hands from the heat. Spoon out the contents and place them in the pan with the bacon and onion. Cook and mash the potato with the back of a wooden spoon.

Add the white sauce and mix thoroughly. Spoon the mixture back into the potato skins and place into an oven proof dish. Sprinkle with the remainder of the cheese and cook in a hot oven for about another ten minutes.

Prepare the vegetables and serve.
