2.4 Thursday - Bacon and Rice

Bacon and Rice


One and half cups of brown rice
Packet bacon
Clove of garlic
One onion, chopped
Quarter of a cabbage, thinly sliced
4 florets broccoli, sliced 
1 spoon seasoning
1 spoon of tinned chopped tomatoes


Put the rice on to boil for 5 minutes. Reduce the heat, put on the lid and cook for 15 minutes until all of the liquid has gone.
Cut the bacon roughly, into two-inch pieces, and place in a pan with the onion, garlic and thyme (no oil required).
Move it around with a spatula until cooked through.
Add the seasoning, cabbage, tomato and thyme.
Keep stirring, then add the water and broccoli and cook for a further two minutes.
Add the cooked rice, stir in and serve.
