5.3 Wednesday - Midweek Roast (Turkey)

Midweek roast (turkey)

Ingredients

Turkey drumstick
Garlic clove, sliced
Thyme
3 spoons of seasoning
2 spoons of cooking oil
Potatoes
Flour
1 egg
Milk
Vegetables
Salt

Method

Use a sharp knife to separate the skin from the turkey drumstick but do not remove it.

Cut four deep holes into the meat towards the bone and place 2-3 slices of garlic, a piece of thyme and a teaspoon of seasoning in each hole.

Rub the rest of the seasoning all over the outside of the meat. Scatter the garlic and thyme around the meat and pull back the turkey skin to cover. Wrap in tin foil or place straight into the oven on a baking tray and cook at 180 degrees (gas mark 4-5) for an hour (half way through, pour off the meat juice into a pan to make some gravy), open up the foil and put the meat back in the oven to brown.

Wash and slice the potatoes, rub in oil and place in the oven for 40 minutes to roast.

Place a spoonful of oil in an oven proof dish and put it in the oven for 5-6 minutes.

Mix egg, salt, flour and milk together to make a batter.

Take the oiled oven dish out of the oven so that you can pout the batter slowly into the hot oil and place back in the oven to cook for 30 minutes.

Prepare the vegetables.

Add some water, seasoning and cornflour to the meat juice that you poured off earlier to make the gravy.

Serve.
